There are places where the air itself carries the memory of what has been cooked for centuries. Venice is one of them, the city built of water and stone, where the act of cooking is never hurried, and flavour comes not from invention but from devotion to the traditions centuries old..

For one week, Baubau Dining drifts into that still, luminous world. Our kitchen turns toward Venice a chance to show cooking that celebrates those fishermen whom once brought their catch from the lagoon to the cooks stirred quietly at their stoves as the light faded over the water.

Four-course set menu — $110

Snack — Baccalà Mantecato, polenta chip
Whipped salted cod with potato, olive oil, herbs, and a crisp shard of polenta — a dish as simple as it is eternal.

Pasta — Bigoli in salsa
Pici tangled with caramelised onion and anchovy, humble and honest, the very heart of Venetian cooking.

Main — Sella di Cervo al Ribasso di Amarone
Venison loin with chestnut purée and a reduction of Amarone — dark, velvety, and perfumed with the warmth of autumn.

Dessert — Tiramisù
A soft, generous ending: mascarpone, coffee, and sabayon layered in quiet harmony.

And for those who linger a little longer, Baicoli Veneziani may be offered with coffee — fragile biscuits that speak of another time.

Each plate carries a fragment of Venice: its restraint, its patience, its calm delight in good things. Available both for lunch and dinner, this menu is an invitation to slow down, to eat as the Venetians do — as if the world outside had stopped moving and the tourists are just a summer dream that may not happen…..

To dine in Venice is to understand that wine is not a companion — it is part of the meal’s very soul.

Our sommelier has curated a selection of Venetian wines that move with the food like the tide beneath a gondola.
From crisp whites shaped by sea breeze to deep, velvety reds born in the sun-warmed hills, each glass follows the rhythm of the menu — quiet, deliberate, and full of grace.

The wine pairing completes the experience.
Together, the food and wine become a portrait of Venice: luminous, fleeting, and unforgettable.
